Cucumber Slices with Feta Cheese Filling

Yields: 6 servings as an appetizer

2 cucumbers

½ cup rice vinegar

2 Tbsp honey

½ cup sour cream

¼ cup mayonnaise

½ cup feta cheese, crumbled

½ cup fresh chopped chives

1 Tbsp fresh dill

24 fresh basil leaves (optional)

 

Cut off ends of cucumbers and cut into half-inch slices. Scoop out and remove a little pulp from the center of each slice to make a “cup” (be careful not to dig into the other side).

Mix together the rice vinegar and honey. Place cucumbers in a bowl and drizzle with vinegar dressing. Cover and refrigerate one hour.

Mix together the sour cream, mayonnaise, feta cheese, chives and dill.

Shake marinade off cucumbers and fill each with about one hearty teaspoon of the filling. Garnish with a fresh basil leave on each cup.
