Sandwich Me In Aims for Zero Waste

Celebrating one year in business—and only discarding a total of eight gallons of garbage into the landfill in that time—Sandwich Me In, in Lakeview East, has been certified by Green Seal Chicago as an officially “green” restaurant.

Owner Justin Vrany’s casual dining, quick-service restaurant uses a local company, Collective Resource, to pick up their compost once a week, including natural materials such as bones, compostable servingware, napkins and paper. Vrany says, “We also have a chicken farm that takes all our raw fruit and vegetable waste and feeds it to their chickens. All of our recyclables are brought to Uptown Recycling.”

Sandwich Me In serves local meats and fresh produce with an emphasis on sustainability (reduce, reuse, recycle) and the utmost attention to educating guests about how their food travels from farm to plate. The menu is simple, but with a culinary flair to distinguish theirs from other sandwich restaurants.

Vrany says, “We are incorporating as many sustainable programs into our restaurant as possible, and our ultimate goal is to have zero waste.”
