Vegan Chocolate Truffles

 

This raw, vegan dessert is sugar-free, gluten-free and nut-free. It is good for heart health and a great source of fiber. Cardamom is an antioxidant and anti-inflammatory, and helps with digestion, detoxification, cancer prevention and blood pressure.

 

 

30 oz pitted dates

2 young coconuts (not packaged coconut water)

90 oz dry coconut flax

16 oz dry almond flour

1 cup raw organic cacao powder

1 tsp cardamom powder

Soak dates in water overnight or at least six hours. Blend the soaked dates with coconut water until creamy. Add coconut flax and almond flour. Mix well by hand. Add cacao powder and cardamom powder. Mix some more by hand. Roll dough into balls of the desired size.

Roll the balls into dry coconut flax and serve.
