Recipes: Gluten-Free Mother’s Day ‘Breakfast in Bed’ with the Hinton Girls

Mother’s Day is a special time for families, as it provides an opportunity for children to show their appreciation to Mom, Grandma and other important women in their lives. The gluten-free kitchen is normally created by mom, Tiffany Hinton, of GF Mom Certified. However, this May the Hinton sisters Franki, Lillie and Josi, have decided it is their turn to make brunch for Mom.

The Hinton sisters suggest making your mom allergen-friendly pancakes with strawberry jelly or some fruit, and tons of yummy maple syrup. Franki has become quite the baker in the kitchen, helping her little sisters with the bigger projects. Josi would add bananas on the side with some water for mom, while Lillie insists mom needs a warm blue milk latte to go with the pancakes. The recipes below are a special creation inspired by sisters Lillie and Josi. Josi suggests making two breakfast trays and adding a few presents and a garden flower to celebrate the day. Lillie and Josi’s final tip is to make the food with lots of Love and Joy. Happy Mother’s Day from the Hinton Family!

 

Blue Milk Latte

Yield: one mug

Using a milk frother, heat and froth:

½ cup oat milk

½ tsp blue spirulina powder

¼ tsp vanilla extract

2 tsp maple syrup

Pour into mug, then make the white froth layer with the milk frother, using:

½ cup oat milk

½ scoop bone broth powder

Pour slowly over the blue milk.

 

Blueberry Pancakes

Yield: 16, 3-inch pancakes

1 ¾ cup gluten-free flour

2 eggs or equivalent substitute

1½ cups oat milk

3 Tbsp melted butter

3 Tbsp sugar

2 tsp baking powder

1 tsp vanilla extract

½ cup fresh blueberries

Mix all ingredients together until there are no lumps with a whisk, then add blueberries. Cook on a griddle. Top with maple syrup or a dusting of powder sugar.
