Summer in a Bowl ~ Full of peak-summer farmers market finds, Garlic Lover’s Gazpacho is a healthy, flavorful chilled soup.

Summer in a soup bowl. This gazpacho recipe is the perfect way to celebrate the abundance of heirloom tomatoes in gardens at the height of summer. Tomatoes provide vitamin C and B6, as well as iron, potassium, magnesium and calcium. Cucumbers are a source of vitamins A and C; plus potassium, calcium and iron. Garlic is a strong source of vitamins and nutrients, especially potassium.
 
Garlic Lover’s Gazpacho
Yield: 4 servings

6-8 medium tomatoes, quartered
    (reserve a little to dice for garnish)
3 cloves garlic, chopped
1 cucumber, peeled and sliced
    (reserve a little to dice for garnish)
1 poblano pepper, cut into 1-inch pieces
1 small red onion, peeled and sliced
½ cup extra-virgin olive oil
3 tsp sherry vinegar
3-4 pinches pink Himalayan sea salt
8 cranks freshly ground black pepper
 
Place all ingredients in blender and pulse on high until well blended.
Put in refrigerator long enough for the ingredients to come together well and to chill, about 6 to 8 hours.
 
To serve: Pour into bowls and top with a garnish of diced cucumber and tomato, and a drizzle of extra-virgin olive oil.
