Summer in a soup bowl. This gazpacho recipe
is the perfect way to celebrate the abundance of heirloom tomatoes in gardens
at the height of summer. Tomatoes provide vitamin C and B6, as well
as iron, potassium, magnesium and calcium. Cucumbers are a source of vitamins A
and C; plus potassium, calcium and iron. Garlic is a strong source of vitamins
and nutrients, especially potassium.
