4-5 ripe heirloom tomatoes

1 small red onion

¼ cup fresh basil leaves

¼ cup extra-virgin olive oil

2 Tbsp balsamic vinegar

Salt and pepper to taste

Slice the heirloom tomatoes into thick rounds and place them on a serving platter.

Thinly slice the red onion and separate the slices into rings. Scatter them over the tomatoes.

Tear the fresh basil leaves into small pieces and sprinkle them over the tomatoes and onions.

In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, salt and pepper until well combined.

Drizzle the dressing over the tomatoes, onions and basil.

Allow the salad to sit for 10-15 minutes to allow the flavors to meld together.

Serve the heirloom tomato salad as a side dish or as a light, refreshing appetizer.

Note: Customize this recipe by adding other ingredients such as fresh mozzarella cheese or avocado slices. Feel free to adjust the quantities and seasonings according to taste preferences.
