Summer Herbed Carrots

Yields: 4 to 6 servings

2 lbs carrots, sliced into sticks like fries

¼ cup avocado oil

1 Tbsp parsley, chopped

1 Tbsp oregano, chopped

1 Tbsp chives, chopped

2 Tbsp garlic, minced

¼ cup Parmesan (nutritional yeast or non-dairy parmesan product for vegan option)

Summer allows families opportunities to enjoy indoor and outdoor cooking. To bake this recipe, preheat oven to 375° F or preheat an outdoor grill to medium-high heat.

For oven baking, prepare a baking sheet by lining with parchment paper. For outdoor cooking, wrap ingredients in heavy-duty grilling foil pouch by folding over sides of foil sheet to create a boat or envelope shape. Keep on grill rack away from direct flame while cooking.

Mix all ingredients together, except the chives and parmesan. Roast in the oven or grill rack for 25 to 30 minutes until the carrots are soft and slightly brown. Remove from cooking source and top with fresh chives and parmesan.
