Summer Celebration Salad

6 cups multicolor cherry and grape tomatoes, halved (about 2 qts)

4 cups multicolor sweet peppers, coarsely chopped (about 3)

4 cups small cucumbers, thinly sliced (about 6)

2 cups green onions, chopped (1 bunch)

1 cup radishes, thinly sliced (1 bunch)

1 cup fresh parsley, chopped

½ cup fresh basil, chopped

1 cup white wine or rice vinegar

½ cup sugar

1 tsp garlic powder

1 tsp sea salt

1 tsp white pepper

Visit a local farmers’ market at open to ensure the best selection of produce. Choose colorful varieties of tomatoes, peppers and radishes.

Substitute any fresh produce, as this simple dressing works well with almost everything. Prep all the produce and herbs and toss together in a large bowl.

In a quart jar with a tight-fitting lid, combine the vinegar, sugar and seasonings and shake until sugar is dissolved.

Pour dressing over vegetable mixture and stir gently.

Refrigerate until ready to serve.
